Thank You Pumpkin Bread Recipe
Preheat oven to 350 degrees
Grease and flour 2 loaf pans or 4 mini loaf pans
1-cup butter or margarine, room temperature
3 cups sugar
3 eggs, room temperature
1-teaspoon vanilla
1 large can pumpkin
3 cups flour
1-teaspoon salt
1-teaspoon baking powder
1-teaspoon baking soda
1-teaspoon cinnamon
1 teaspoon cloves
1/2 teaspoon nutmeg
1-cup raisins (use mix of black and golden raisins, currants and cranberries)
1-cup nuts (use mix of pecans and walnuts)
Combine butter and sugar until blended. Add eggs, vanilla and pumpkin. Sift all dry ingredients: flour, salt baking soda, baking powder, and spices. Stir sifted dry ingredients into pumpkin mixture. Add raisin and nut mixtures. Fill loaf pans 2/3 fill. Bake at 350 degrees; large loaf pans bake for approximately 80 minutes, small loaf pans bake for approximately 60 minutes. To check for doneness insert knife into center of loaf, bread is done when knife comes out clean.
